Steps
Place a large, long - handled skillet on the stove and set the heat to medium. Pour in the olive oil. Once the oil is hot, add the sliced sausage and sauté it until it turns brown.
Add the onion to the skillet with the browned sausage and continue sautéing. Keep cooking the onion until it begins to caramelize, which should take about 5 minutes.
Put the cachaça in a microwave - safe container and heat it in the microwave for about 15 seconds, until it's just warm to the touch.
Take the skillet off the burner. Carefully pour the warm cachaça into the skillet. Using a long - stick lighter, ignite the fumes at the edge of the pan. Make sure to protect yourself from the flames.
Return the skillet to the heat and gently shake the pan until the flames burn down.
Transfer the contents of the skillet to a serving dish. If you'd like, garnish it with parsley and pickled hot peppers.
Serve the Linguiça Bêbada immediately.
