Let's start by making the croutons. Preheat your oven to 350°F (177°C).
In a small mixing bowl, combine the olive oil, pepper flakes, Brazilian sofrito, and salt. Give the mixture a good stir until well combined.
Take the baguette slices and gently brush the oil mixture on both sides. Place the slices in the preheated oven and bake for 4 - 5 minutes, until they turn golden brown. The exact time may vary depending on your oven.
Once the croutons are golden brown, remove them from the oven and let them cool.
Now, it's time to make the salad. In a medium mixing bowl, combine the cheese and tomatoes.
Add the olive oil and balsamic vinegar to the bowl with the cheese and tomatoes. Gently mix the ingredients just enough to coat the tomatoes and cheese with the oil and vinegar.
