Steps
Add your leftover beans to a food processor. Pulse the beans until they are smooth, then set the pureed beans aside.
Place a medium pan over medium heat. Drizzle about a tablespoon of olive oil into the pan.
Add the diced bacon to the pan and fry it until it becomes crispy.
Once the bacon is crispy, use a slotted spoon to scoop the bacon out of the pan. Place the bacon on a plate lined with paper towels and set it aside.
Add the diced onions to the pan with the bacon fat. Sauté the onions until they become translucent.
Next, add the minced garlic to the pan. Sauté the garlic until it becomes fragrant and lightly golden, about 30 seconds.
Add the pureed beans to the pan and stir them to combine with the other ingredients.
When the beans start to simmer, reduce the heat to low. Slowly sprinkle the Brazilian cassava flour into the pan and stir continuously until the mixture thickens into a soft puree consistency.
Serve the Brazilian Black Bean Puree drizzled with olive oil and topped with the crispy bacon. You can also add a splash of your favorite vinegary hot sauce.
