Editor's Note: Named Bourbon Chicken because it was supposedly created by a Chinese cook who worked in a restaurant on Bourbon Street.
Heat oil in a large skillet over medium - high heat.
Add chicken pieces to the hot oil and cook until they are lightly browned on all sides, about 3 - 5 minutes.
Remove the chicken from the skillet and set it aside.
Add the remaining ingredients to the skillet. Heat them over medium heat, stirring constantly, until the ingredients are well - mixed and dissolved, about 2 - 3 minutes.
Add the previously removed chicken back into the skillet and bring the mixture to a hard boil.
Reduce the heat to low and let the mixture simmer for 20 minutes.
Serve the bourbon chicken over hot rice and enjoy!
